The Shed Distillery was set up by PJ Rigney in 2014 and situated in Connacht due to the area’s wild location and water quality. Rigney has spent 30 years in the drinks industry working with brands like Bailey’s and Clontarf before setting up his own distillery, focusing on small batch Irish spirits which are all produced in house at The Shed. The whiskey that is made here is unique to Ireland – Single Pot Still Whiskey. It has similar rules to Single Malt but differs in that it must have at least 30% unmalted barley in the recipe in addition to malted barley. This adds a cereal spiciness to the whiskey and a more weighty texture. Up to 5% other cereal grains may be added and Drumshanbo uses Irish Barra oats for a unique flavour profile. After a triple-distillation, maturation is in a combination of ex-Bourbon and ex-Oloroso Sherry casks. Drumshanbo is bottled at 43% ABV and they do not add any caramel to colour their whisky, nor do they use chill filtration.
