A new member to London's relatively small malt whisky scene, Bimber is set to be the first of these distilleries to release a single malt whisky made in London. The team currently has spirit being matured in ex-Bourbon, ex-Pedro Ximénez, ex-port and virgin American oak casks and is currently selling its whisky by the cask ahead of its inaugural launch, expected in June 2019.
Distilled, bottled and labelled by hand on site in north-west London, Bimber was founded in 2015 and released a vodka in early 2016. The distillery has since launched a London Dry gin and various vodka infusions.
Founder Dariusz Plazewski named his distillery after the Polish for 'moonshine' in honour of his family's heritage.
