Personal, expressive, filled with vitality and a tribute to the landscape. The work of the Capreolus Distillery is the pursuit of Barney Wilczak, a distiller whose singular vision has placed his work amongst cult status in both the wine and spirits world, his peers in the latter recently naming him as the Rising Star 2022.

The Eaux de Vie produced at the Capreolus Distillery isolate the essence of their local fruits. This is achieved through hand-grading every single berry, quince, pear or apple in the family's Cotswolds garden (the lean-to greenhouse houses the stills). Only wild fermentations from the fruits natural sugar, working within 50 miles, no recycling of feints and a purely qualitative approach. All of this means yields as low as 45kg of fruit in each litre(!).

These technical details fall away when you realise that this compression, this perfumery-like approach to preserving these fruits, means that flavours normally imperceptible in the raw fruit are elevated to our aroma and flavour thresholds. These bring you closer to the parent plant or tree, their maritime climate, heritage and the Cotswolds landscape in which they grow. They are the exemplification of terroir and personal expression.
